Mediterranean Pesto
Pesto commonly has pine nuts, parmesan cheese, olive oil and basil. But that’s the Italian version. I present to you mediterranean pesto. I haven’t done this yet, but I will try it soon. =D
Ingredients:
1/3 cup black olives (not stuffed)
1/3 cup green olives (not stuffed)
1/3 porcini mushrooms
100 grams anchovies or 1 flat can (drained)
1 cup olive oil
500 grams pasta (any kind will do but I recommend penne)
Instructions:
1. Blend all ingredients in a blender
2. Cook pasta til al dente and drain
3. Mix mediterranean pesto into pasta
4. Serve and enjoy!
